Breakfast Patty Melt

Breakfast Patty Melt

Ingredients

  • 4 Tablespoons Butter, More If Needed
  • 1/2 whole Medium Yellow Onion, Sliced
  • 1/4 pound Breakfast Sausage (Jimmy Dean, JC Potter, Etc)
  • 2 whole Eggs, Beaten
  • 3 slices Cheddar, Swiss, Provolone, Or Other Cheese
  • 2 slices Bread (sourdough, Rye, Whole Wheat, Etc.)

Preparation Instructions

Heat a non-stick skillet over low heat and melt 2 tablespoons of the butter. Add the onions and cook, stirring occasionally, for 15 to 20 minutes, until onions are soft and slightly caramelized. Remove them to a plate and set them aside.

Form the sausage into a thin patty about the width of the bread you’re using. Add it to the same skillet and increase the heat to medium. Cook the patty on both sides until fully cooked through, about 5 minutes. Remove to a plate and set aside. Wipe the skillet clean with a paper towel.

Pour in the beaten eggs and cook, forming them into a rough circle as they set up. Flip to finish cooking on the other side.

Assemble the patty melt: bread, cheese, patty, eggs, cheese, onions, cheese, bread. Melt the remaining butter in a clean skillet over low heat. Place the sandwich in the skillet and cook low and slow for a good 8 to 10 minutes, until the cheese is melted and the bread is deliciously crisp. Add more butter to the skillet if the bread needs it (you don’t want the bread to be dry!)

Slice in half and serve.

Ingredients

  • 1 bag frozen Cascadian Farms Spud Puppies
  • salt to taste
  • ketchup (for serving, if desired)

Instructions

  1. Spray a hot waffle iron generously with nonstick cooking spray.
  2. Place Cascadian Farms Spud Puppies on top of the hot waffle iron. Press the waffle iron closed, using a bit of pressure as needed to slowly lower the lid over the Spud Puppies. After 1 minute, open the waffle iron and add any spud puppies to empty spots, as needed. Close the lid and cook until crispy and golden brown.
  3. Remove from waffle iron. Salt lightly. Serve with ketchup, if desired.

Bacon Egg and Biscuit Cups Recipe

Ingredients

  • 15 eggs, scrambled
  • salt and pepper
  • ½ pack of ham, diced
  • one pack chopped spinach, defrosted
  • biscuit dough
  • 30 slices bacon
  • shredded cheddar cheese

Instructions

  1. Scramble the eggs in a large measuring cup with a spout. Add salt and pepper. Flatten out each piece of biscuit dough with your fingers and cut into four pieces. Place the pieces into greased cupcake pan. Par-cook the bacon in the microwave then wrap the bacon around the top of the biscuit dough.
  2. Bake at 350 degrees for 5 minutes. Remove the pan from the oven and pour in the scrambled egg mixture into each cup, only about 2/3 full. Put on the toppings of ham, spinach, cheese or anything else you like.
  3. Put the pan back into the oven for 10-15 minutes or until eggs are cooked. Remove each biscuit cup and enjoy warm.

Deep Dish Pizza Cups Recipe

Ingredients

  • 1 tube Pillsbury Simply French Bread
  • 1 1/4 cup Muir Glen Crushed Tomatoes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon chili powder
  • 1 tablespoon Italian Seasoning
  • 1 cup precooked sausage crumbles
  • 2 tablespoons bacon bits
  • 1 1/2 cups Italian cheese, grated
  • 8 slices pepperoni

Instructions

  1. Open the Pillsbury Simply French Bread and gently unroll it until flat. Cut into 8 even squares.
  2. Press the squares of bread dough into each of 8 muffin tins, which have been lightly sprayed with nonstick cooking spray.
  3. In a small bowl, stir together the Muir Glen crushed tomatoes, garlic powder, onion salt, chili powder, and Italian Seasoning. Spoon evenly into each of the dough cups.
  4. Sprinkle the sausage crumbles and bacon bits over the sauce in each cup. Top with cheese. Add a single pepperoni slice on top.
  5. Bake in an oven preheated to 400 degrees for 15-18 minutes, or until the edges of the bread cups are golden brown and the cheese is bubbly.

Grilled Cheese Rolls Recipe

Ingredients

  • 6 slices wheat bread
  • 6 pieces American cheese
  • 1 tablespoon butter

Instructions

  1. Cut the crusts off the bread.
  2. Flatten your crustless bread squares with a rolling pin and then top each slice of bread with one piece of cheese (don’t be tempted to use more cheese; in this case, one is plenty).
  3. Melt butter in pan over medium heat.
  4. Roll your cheese squares up and cook them in the melted butter over medium heat, seam-side down first to secure them, for about five minutes until cheese is melted. Roll them occasionally while cooking to crisp all sides.
  5. Remove from the pan and your grilled cheese rolls are ready to enjoy!

Pineapple Upside Down Banana Pancakes Recipe

Ingredients

  • 3 Ripe Bananas
  • 2-¼ cups Vanilla Almond Or Soy Milk
  • 1-½ cup Whole Grain Flour (such As Wheat Or Oat)
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 Small Pineapple
  • A Little Canola Oil

Instructions

  1. Mash bananas with a fork—you should have 1 ½ cups. Process the banana in food processor with about ½ cup of milk until smooth. Blend in remaining milk. Whisk together the flour, baking powder and salt. Stir dry ingredients into banana mixture until blended. Let sit while cooking pineapple slices.
  2. Cut outer skin off pineapple. Cut pineapple into slices ½ inch thick, making 8 slices. Using a small round cookie cutter, remove center core of each slice. Heat a skillet to medium low heat. Add a little oil to skillet. Cook pineapple slices in batches for about 2 minutes.
  3. Turn pineapple slices over. Immediately pour ¼ cup batter into the center of each pineapple slice, allowing batter to spill over and form a circle around the outside of the pineapple slice. Add a little more batter if necessary to form about 1 inch of pancake around the outside of the pineapple slice. Cook for 2 to 3 minutes, until lightly browned.
  4. Carefully flip over and cook other side for about 2 minutes, until pancake is cooked through and is lightly browned.

Fancy Ham and Egg Biscuits Recipe

Ingredients

  • 1 can large refrigerated biscuits (mine had 8 in it)
  • 8 eggs
  • 1 1/2 tablespoons milk
  • 1/4 teaspoon Seasoned Salt (or 1/4 salt and 1/8 pepper)
  • Cooking spray
  • 1 tablespoon fresh chives, minced
  • 2/3 cup deli ham, sliced thin
  • 1/2 cup shredded cheese

Instructions

  1. Start by baking the biscuits according to the directions on the can.
  2. While the biscuits are in the oven, crack the eggs into a medium bowl. Pour in the milk and add the seasoned salt. Give it a good whisk to fully incorporate everything.
  3. Liberally spray a medium skillet with the cooking spray and place on a burner on medium low heat. Pour in the egg mixture. Using a rubber spatula, stir stir stir stir those eggs. Keep them on medium low heat. The key to fluffy eggs is low and slow.
  4. Once the eggs are almost done, add the ham and chives. Then add the cheese and give it a good stir.
  5. Split the biscuits and spoon on a little of the egg mixture. Place the top of the biscuit back on and serve

Bubble Up Breakfast Bake Recipe

Ingredients

  • 1 pound of reduced fat breakfast sausage
  • 1 tube of refrigerated biscuits
  • 2 cups shredded cheddar cheese
  • 1 small can of diced green chills
  • 6 eggs
  • Salt and pepper to season
  • 1/4 cup milk

Instructions

  1. Start by preheating the oven to 350 degrees.
  2. Add the sausage to a medium skillet on medium high heat. Cook until no longer pink in the middle.
  3. While cooking the sausage, cut each biscuit into 8 pieces and place in the bottom of a 9×13 baking dish sprayed with cooking spray. Add the sausage to the pan, on top of the uncooked biscuits. Sprinkle cheese on top of that, along with the green chillis.
  4. In a separate bowl, whisk together the egg, salt and pepper and milk. Pour the egg mixture over everything in the baking dish.
  5. Place in the oven for 30 minutes or until a knife comes out clean in the middle of the dish. Be careful, the cheese might make it seem like it’s uncooked egg but it’s just cheesy goodness.

Egg Bacon Baguette Breakfast Recipe

Ingredients

  • 1 slice slab bacon (2 oz; 55g)
  • 1/4 French baguette
  • 2 eggs
  • Salt and pepper
  • Olive oil for cooking

Instructions

  1. First, cut the baguette. And make a hole but don’t remove all the white bread inside. Just like this. And set aside.
  2. Add the olive oil in the frying pan and heat the oil over medium heat. Meanwhile cut the bacon. I am using slab bacon today. Then cook until brown and crisp. Now transfer to a kitchen towel lined plate to drain the excess fat.
  3. Now wipe out the bacon fat on the pan and lightly spray oil. Reduce the heat to medium-low and place the baguette on the pan.
  4. Crack an egg in a cup and slowly pour it into the hole. If you press the baguette firmly with fingers, the egg white will not get leaked out on the bottom of the bread. Season with salt and pepper and cover the pan. And cook for 2 minutes. And flip it over. Then cook another 1 minute or until the egg is cooked to your liking.
  5. Repeat the process. This recipe is for 2 egg baguettes.

Stromboli Recipe

Ingredients

  • Pizza Dough
  • Genoa Salami
  • Ham
  • Pepperoni
  • Provolone
  • Mozzarella
  • Egg Yolk
  • Olive Oil

Instructions

  1. Preheat the oven to 400. Flour a work surface and roll the dough out into a rectangle.
  2. Start layering the meat in the center, leaving an inch or two along the edges. Add provolone and mozzarella. I used chunks of mozzarella but grated would probably work fine too.
  3. Combine the egg yolk with a couple tablespoons of water and brush the egg wash around the edges. It’ll help the dough stick together when you roll it up.
  4. Starting along one long edge, gently roll it up.
  5. Pinch the edges together to seal it. Tuck the ends under and pinch them together.
  6. Place it on a baking sheet, seam side down. Coat the top and sides with a little olive oil. You could sprinkle it with a little granulated garlic if you like.
  7. Bake at 400 for about 20 to 25 minutes.
  8. Cut it into slices.Serve with sauce alongside.
