Rum Runner Roast

Ingredients

» 2 1/2 to 3 lb. game roast
» 1/4 cup vegetable oil
» 2 cups chopped onions, 1-inch pieces
» 1 1/2 cups chopped carrots, 1-inch pieces
» 1 1/2 cups chopped yellow turnips, 1-inch pieces
» 3 cups beef stock
» 1 cup chili sauce
» 2/3 cup dark raisins
» 1/2 cup dark rum
» 1/3 cup molasses
» 1 Tbsp. beef base
» 2 tsp. dry thyme
» 1 tsp. black pepper
» 1/2 cup dry red wine
» 1 Tbsp. Worcestershire sauce
» 2 tsp. cornstarch

Directions
1. Trim off all fat and silver skin from roast.
2. In a Dutch oven, heat oil until smoking hot.
3. Add roast and brown on all sides.
4. Remove roast.
5. Add vegetables and cook for 4 minutes to lightly brown.
6. Pour off excess oil and return roast to Dutch oven.
7. Add beef stock, chili sauce, raisins, rum, molasses, beef base, thyme and black pepper. Bake in a 350-degree oven for 2 hours.
8. Combine red wine, Worcestershire sauce and cornstarch to make a smooth paste. Add to liquid and stir to combine.
9. Return to oven for 20 minutes.
10. Remove roast and slice into thick pieces.
11. Serve with vegetable sauce.
