3/4 cup crushed graham crackers – I used dry oat cookies
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown cane sugar
110 grams butter
1 teaspoon vanilla
3/4 cup chocolate chips
12 marshmallows – cut into thirds
Preheat your oven to 170C.
Combine flour, baking soda, salt and the crushed crackers together. Mix the butter with the sugar until creamy. Add in the egg and vanilla. Then mix in the dry ingredients. Using a muffin top pan, place the dough into each holes.
Don’t worry to shape them. They will spread nicely to the holes. Bake them for 12 minutes. When they’re ready, I waited 5 minutes for them to cool and popped them out.
Put them on a baking sheet and place the chocolate chips on top so they can melt.
I used Lindt chocolate disks because there’s no way to purchase chocolate chips around here… Wait for them to melt nicely on top of the cookies.
Then put the marshmallow bits on top of the melted chocolate.
Set your oven to broil. Turn it up to 230C. When your oven reached the heat, place the baking sheet the closest to the top and keep the cookies in for 1 minute. But watch carefully so the marshmallows wouldn’t burn. Take them out of the oven and let them cool for 10 minutes. Enjoy!
